INGREDIENTS AND PROCEDURE

Chocolate chiffon cake:

1 cup all purpose flour
1/2 cup white sugar
1 tsp baking powder
1/4 tsp salt
2 tbsp powdered milk
1/4 cup cocoa powder
4 egg yolks
1/4 cup water
1/4 cup vegetable oil
1 tsp vanilla extract

meringue:

4 egg whites
1/2 cup white sugar
1/2 tsp white vinegar

Fillings:

1 1/2 cups whip cream powder
1/2 cup very cold water
1/4 tsp red food color
1 tsp strawberry flavor
1/3 cup strawberry jam

Chocolate Ganache (frosting):

1 1/2 cups semisweet chocolate
1/3 cup evaporated milk

Toppings/ Decorations(optional):

1/4 cup semisweet chocolate
1/4 cup white chocolate
1/8 cup white chocolate chips



Procedure:

1) Bring water(1 liter) to a boil
2) Combine all purpose flour, white sugar, powdered milk, cocoa powder, baking powder and salt.
3) In a separate bowl combine egg yolks, vegetable oil, water and vanilla extract. Mix well
4) Combine wet and dry ingredients
5) Beat egg whites until foamy
6) Add white vinegar and beat until soft peaks form
7) Gradually add white sugar and beat until stiff peaks form
8) Fold in meringue onto the cake batter
9) Pour cake batter into the cake pan. Pan size: L14.5 x w10.2 x h1.7
10)Cover and steam over med. low heat for 15-18 min.
11)Remove from steamer. Dust cake with powdered sugar
12)Immediately invert cake onto the clean towel
13)Remove cake pan and carefully peel the parchment paper off
14)Dust the other side of the cake with powdered sugar
15)Roll up cake and towel together
16)Set aside and Cool completely

Strawberry whip cream filling:

1) Combine whip cream powder, red food color, strawberry flavor and cold water
2) Whip until it turns creamy and doubled in size
3) Fold in strawberry jam

Chocolate Ganache:

1) Heat the evaporated milk
2) Pour hot milk onto the chopped chocolates
3) Stir until chocolate melts

Toppings:

1) Melt semisweet chocolate and white chocolate

Assemble:

1) Carefully unroll the cake
2) Spread the strawberry filling onto the cake
3) Roll up the cake
4) Chill for 30min. to 1 hour
5) Frost the whole cake
6) Decorate the cake with melted chocolate and white chocolate chips
