Tokwa't Baboy | Tofu and Pork

The basic ingredients are 4 pieces pat dry tofu, 1 piece pork belly, 2 pieces diced tomatoes, 1 piece onion cut into halves and another 1 minced onion, 1 thumb sized sliced ginger , 3/4 cup soy sauce, 1 cup vinegar, salt and pepper to taste, 1 tsp sugar, bird's eye chili and 1/4 cup water.

Procedure:
First deep fry tofu until done; drain excess oil. Sliced tofu into bite size then set aside. Season the pork with salt and pepper then fry until done. Drain excess oil, cut into bite size; set aside. In a pan combine vinegar, soy sauce, sugar, water, salt and pepper.  Mix and simmer for 2 minutes. Now combine the sliced onion, ginger and simmered sauce; blend it and set aside. In a bowl combine tofu, pork, tomatoes, minced onion, chili and the sauce. Serve and enjoy!
Tokwa't Baboy is a deliciuos appetizer from the Philippines. It is typically made of pork ears, pork belly and fried tofu with soysauce-vinegar mixed with onions and chili peppers. This dish is traditionally served with beef. But it can be a main dish also partnered with rice or toppings for porridge.
