Buko Pandan
Buko Pandan is Filipino dessert. Philippines is very abundant with coconut fruits so we have different kind of dessert using the coconut.
In this dessert Buko which is the coconut is added with pandan flavor. Pandan leaves is used in cooking as a flavoring. It is a perfect combination with "buko".
Buko pandan is a refreshing dessert and this is perfect for summer. Very easy to prepare and cheap too.
Ingredients:
3 cups coconut, shredded
1/2 cup tapioca
1 can condensed milk
1 big can evaporated milk
1 packet Buko Pandan Gulaman
Procedure:
1) Cook the tapioca; set aside
2) Cook the Gulaman according to package directions; Let it set
3) Slice into small cubes; You can also use cookie cutter to make fun shapes
4) In a bowl mix condensed milk, evaporated milk, shredded coconut, tapioca and gulaman.
5) chill for 4 hours or overnight
note: best served chilled
